Here are three more good recipes that I discovered and wanted to share. Both Stan and Annalise approve of all three of these. Since they are both somewhat picky eaters, especially Anna, that speaks for itself!
ENCHILADA CASSEROLE
1 lb lean ground beef or turkey
1 can (10 oz) enchilada sauce
1 cup of salsa (which I also have a good recipe for homemade salsa but I have to locate it)
2 cups of fresh or frozen corn
4 cups (16 oz) of shredded cheese (I use colby jack)
6 flour tortillas (10 inch)
1. In a large skillet, cook ground meat over medium heat until no longer pink; drain.
2. Stir in the enchilada sauce and salsa and set aside
3. Place 2 tortillas, overlapping, in the bottol on a 13x9 baking dish.
4. Cover the tortillas with 1/3 of the meat mixture. Top that with 1 cup of corn and then top the corn with a third of the cheese.
5. Repeat the layers once and then tip with the remaining torillas, meat and cheese
6. Back uncovered at 350 degrees for 30 minutes
CHICKEN BASKETS
1 package (10 oz) frozen pastry shells
1 can (10 3/4 oz) condensed cream of chicken soup, undiluted
9 oz of cooked chicked, diced
1 cup of frozen mixed vegetables (thawed)
3/4 cup of milk
1. Bake pastry shells according to package directions
2. Meanwhile, in a microwave safe bowl, combine the soup, chicken, vegetables and milk.
3. Cover and microwave on high for 4-5 minutes or until bubbly.
4. Cut the top off of each pastry shell and fill with chicken mixture. Place the top back on top of the mixture.
CHICKEN PASTA SALAD - I have taken this side dish several places recently and it has been a hit each time. Plus it is super easy to make and is not the "traditional" pasta salad.
7 oz of pasta (I usually use veggie bowties)
1 can (15 oz) of black beans, rinsed and drained
9 oz of cooked chicken breast cut into cubes
1 large tomato, seeded and chopped
1 cup of Italian salad dressing (I actually only use 1/2 a cup and it is plenty. I use Newman's Own Light Italian)
1. Cook pasta according to package directions; drain and rinse in cold water.
2. In large bowl, combine the beans, chicken and tomato.
3. Add pasta and then the salad dressing and stir until everything is coated with dressing.
